Cuban Tuna Chilli 

Jerk Sauce


1 tbsp all-purpose seasoning
1 tbsp apple cider vinegar
1tbs dark soy sauce
1 1/2 tsp salt
1 tsp pepper
1 tbsp brown sugar
juice of lime
1tsp allspice
1tsp ground cinnamon or freshly ground nutmeg
A handful of fresh thyme sprigs
1 spring onions
5 garlic cloves
2 scotch bonnet peppers


Whizz all the ingredients except the jerk BBQ Sauce in a food blender. Marinate your chicken/ tofu or veg in the jerk sauce overnight or for at least 1 hour. Once the meat has been cooked brush jerk BBQ sauce over the meat to glaze and cook for a further 10 minutes.
